Ingredients

  • 3 cups vegetable of choice ( broccoli, cauliflower, brussel sprouts, carrots)
  • ¼ cup olive oil
  • 1 tsp onion powder
  • 2 tbsp garlic, minced
  • 1 tsp salt
  • pepper to taste

Instructions

  • Preheat oven to 425°
  • Wash and drain all the vegetables.
  • Chop the vegetables into uniform size pieces to ensure even cooking.
  • Place the veggies in a bowl or ziploc bag.
  • Pour the olive oil over the veggies.
  • Add the garlic, onion powder, salt and pepper.
  • Place on a roasting sheet, spreading out to an even layer.
  • Roast in oven for 30-45 minutes.
