Preheat oven to 425°
Wash and drain all the vegetables.
Chop the vegetables into uniform size pieces to ensure even cooking.
Place the veggies in a bowl or ziploc bag.
Pour the olive oil over the veggies.
Add the garlic, onion powder, salt and pepper.
Place on a roasting sheet, spreading out to an even layer.
Roast in oven for 30-45 minutes.
