Fool everyone this holiday season with a delicious dairy free pumpkin pie that is smooth, creamy and delicious! We have several food sensitivities and allergies in our extended family, so we have to modify recipes for every gathering. That doesn’t mean that we sacrifice on taste though!
Once when I was very new to dairy free baking, I made a vegan cheesecake with a ground cashew base/ maple syrup sweetener and it was absolutely awful!! My brother-in-law loves pretty much any dessert you put in front of him, but even he stopped after two bites. It was dreadful!
So from then on I test any recipe I make before bringing it to a function. This time you won’t have to worry because I have done the testing for you!
Allergy Friendly Pumpkin Pie
This pie is easy to adjust for other allergies as well. If you have a gluten allergy, substitute a gluten-free crust.
This pie comes out creamy and flavorful. You won’t even miss the dairy that used to be in it, because the coconut milk provides that smooth texture. The spices are just right, not overpowering or too weak to taste.
No one at your family gathering will know that there in anything different with your pumpkin pie this Thanksgiving.
Recipe for Dairy Free Pumpkin pie
Dairy Free Pumpkin Pie
Ingredients
- 1 can pumpkin not pumpkin pie filling
- 1½ cup coconut milk, full-fat
- 2 eggs large
- ¾ cup sugar
- 2 tsp pumpkin pie spice
- ½ tsp salt
- 1 tsp vanilla
Instructions
- Preheat oven to 425°.
- Whisk all ingredients until smooth.
- Pour into crust
- Bake at 425° for 15 minutes.
- Reduce oven temp to 350° and bake for 35-45 minutes until a toothpick inserted 1 inch from the crust comes out mostly clean.
- This pie will not be completely set until it cools.
- Store in the fridge.
